OG: 1.059 FG: 1.008
Alcohol: 6.5% v/v (5.1% w/w)
Water: Hard water.
Grain: 10 lb. American 2-row
1 lb. Wheat malt
5 oz. American victory
8 oz. American crystal 10L
1 lb. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Step mashing. Dough in at 122 deg. F. for 30 minutes. Raise temperature to 150 deg. F. and hold for 10 minutes. Raise to 158 deg. F. and hold for 20 minutes. Sparge at 172 degrees F.
Boil: 60 minutes SG 1.050 7 gallons
Irish Moss added in last 15 minutes of boil.
Hops: 1 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Fuggles (4.5% AA, 30 min.)
.5 oz. Fuggles (4.5% AA, 15 min.)
Yeast: Muntons Dry Ale Yeast pitched in a starter. Fermentation visible within 1 hour of adding to fermenter.
Log: Fermentation began 03/15/2003 at 70 deg. F. Dry hopped with .5 oz. of Fuggle Hops (4.5% ABU).
Carbonation: 1.0 volumes Corn Sugar: 0.56 oz. for 5.5 gallons @ 72°F
Tasting: Should produce a very bitter ale with an almost floral aroma. If less bitterness is desired, scale back hops to .5 oz at each addition instead of 1 oz.
