Closing Day IPA

My goal here is to get at least 50 % of my gravity from the mash
and make up the rest with extract. I live by my hydrometer so
volumes are aproximated and gravities are exact.

Type: Partial mash Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 54 IBU
OG: 1.060 FG: 1.015
Alcohol: 5.9% v/v (4.6% w/w)
Water: I added 1 tablespoon of Burton Water Salt to the two gallons
of mash water. There are no other water treatments.
Grain: 5.5 lb. British pale
.25 lb. American Vienna
1 lb. American crystal 40L
Mash: 70% efficiency
Mashed at 150° with two gallons of water for 1 hour. Sparged
with 170° water until gravity dropped to 1.010. Total volume
of extract collect was aproximatiely 4 gallons.
Boil: 45 minutes SG 1.055 6 gallons
3 lb. Light malt extract
1 lb. Light dry malt extract
Brought the gravity up to 1.055 with a volume of water equal
to 6 gallons.
Hops: 1 oz. Chinook (12% AA, 45 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
1 oz. Cascade (aroma)
1 oz. Fuggles (aroma)
Yeast: I made a 1 pint starter using extract and water to match a
gravity of 1.060. I pitched White Labs yeast Dry English
Ale (WLP007) and White Labs yeast English Ale (WLP002) at 70°
and allowed to rest 6 hours then pitched.
Log: Brewed 04/06/2002. Yeat pitched at 8:00 PM. Due to an
equipment failure, I lost a gallon of wort, so I am only
fermenting about four and a half gallons rather than five
and a half. I keep my house cold at about 65° so that will
be the fermentation temperature. Dry Hop with 1 oz Fuggles
on 04/13/2002 (1 week.) Rack to secondary fermenter on
04/20/2002 (1 weeks) and dry hop with 1 oz cascade. Bottle
when gravity reaches 1.015.
Carbonation: 1.8 volumes Dried Malt Extract: 4.31 oz. for 5.5 gallons @ 65°F
I actually used 3.5 oz of light DME to prime my 4.5 gallon
batch, but I have included the calculation for the original
batch size of 5.5 gallons.
Tasting: A real winner. Good and hoppy, but well balanced. I think this is
my best beer yet. I will replace the Fuggles with Cascade next
batch. I want to try to get a little more hop flavor.
