All Doped Up on Hops

My IPAs have gone through a long series of subtle AND dramatic modifications... this is the most recent grandchild.

Beer: All Doped Up on Hops Style: India Pale Ale
Type: Extract w/grain Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 63 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.1% v/v (4.8% w/w)
Water: Ideal Pale Ale water salts
Grain: 8 oz. Wheat malt
8 oz. American victory
8 oz. Belgian biscuit
8 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
Steep: Grains steeped at 150°F for 40 minutes, sparged with one quart 160°F tap water.
Boil: 75 minutes SG 1.050 6.5 gallons
6.5 lb. Light malt extract
Irish Moss at 15 minutes until end of boil
Hops: 1 oz. Perle (8% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
0.5 oz. Cascade (6% AA, 5 min.)
0.5 oz. Cascade (aroma)
1 oz. Centennial (aroma)
Yeast: Wyeast 1332 - Northwest Ale.
Pitchable tube (XL) stepped up to a 800 ml starter.
Log: 6 oz. clover honey boiled in one cup of tap water added with dry hops at transfer to secondary. Honey should add 2 gravity points.
Carbonation: Bottled with 5 oz. DME for 5 gallons
