Newts Delight Amber

New Try with Tomahawk hops which seem like another type
of super cascade hop. This makes a very tasty garnet colored
malty hoppy ale. The mix of American and English hops works great.

Type: All grain Size: 10 gallons
Color:
42 HCU (~19 SRM)
Bitterness: 59 IBU
OG: 1.067 FG: 1.017
Alcohol: 6.5% v/v (5.1% w/w)
Water: 1 teaspoon gyspum in mash water and 1 in sparge water.
Grain: 16 lb. Belgian pale
1 lb. Honey Malt
3 lb. Belgian Munich
1 lb. American victory
1 lb. Belgian aromatic
1 lb. Belgian biscuit
1 lb. Belgian CaraVienne
4 oz. Belgian Special B
3 oz. British chocolate
3 oz. Roasted barley
Mash: 75% efficiency
Mash with 6.5 gal at 153° for 30 min.
Remove two gallons and boil ten min then
return to mash raising temp to 157° for 30 min.
Sparge with 10 gal 185° to collect 12 gal sweet wort.
Boil: 90 minutes SG 1.056 12 gallons
Hops: 1 oz. Cascade (6% AA, 90 min.)
1 oz. Tomahawk (15.3% AA, 90 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Tomahawk (15.3% AA, 15 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Cascade (aroma)
2 oz. Fuggles (aroma)
1 oz. Kent Goldings (aroma)
1 oz. Styrian Goldings (aroma)
Yeast: White Labs Caforina Ale Yeast 2 quart starter.
Log: FWH 1 oz Tomahawk and 1 oz Cascade.
Add 1 oz Kent Goldings at end of boil.
Dry hop secondary with 2oz Fuggles and 1 oz Cascade.
Dry hop tritary with 1oz Styrian goldings.
