Larry's IPA

This recipe is a modified version of a Bell's Two-Hearted Ale clone recipe printed in the March 2001 issue of BYO Magazine. This beer took third place in the IPA category of the 2001 Pacific Brewer's Cup (http://www.pacificbrewerscup.org/). I'm still waiting on the scoresheets for numeric score and feedback.

Type: Partial mash Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 51 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.2% v/v (4.9% w/w)
Water: San Francisco water, straight from the tap.
Grain: 1 lb. American 2-row
.5 lb. Belgian aromatic
.5 lb. American crystal 10L
.5 lb. Dextrine malt (Cara-Pils)
Mash: 77% efficiency
Single infusion mash at 154° until fully converted, in this case 90 minutes.
Boil: 60 minutes SG 1.100 3 gallons
6.25 lb. Light malt extract
1 Tsp. rehydrated Irish moss added at 15 minutes to flameout.
Hops: .75 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Centennial (10.5% AA, 20 min.)
1.5 oz. Centennial (10.5% AA, 5 min.)
1 oz. Centennial (aroma)
Yeast: Pitched 800 mL starter of WYeast 1056 - Amercan Ale/Chico.
Log: Dry hop with 1 oz. Centennial hops in secondary for 2 weeks.
Carbonation: Bottled with 3/4 cup corn sugar.
Tasting: Clean IPA with great hop flavor and aroma. Since I did a 3 gallon boil, the beer was not as bitter as it would have been had I done a full wort boil. Next time I'll up the bittering hops to compensate, if I haven't bought a bigger kettle by then. :-)
