Bitterness: 62 IBU
OG: 1.082 FG: 1.010
Alcohol: 9.3% v/v (7.3% w/w)
Water: Gypsum added to mash and sparge water
Grain: 12 lb. American 2-row
1 lb. 8 oz. American crystal 20L
1 lb. Belgian CaraMunich
Mash: 85% efficiency
Infusion mash with rests at 122°, 145°, and 155°. Mash out at 170°
Boil: 60 minutes SG 1.070 7 gallons
1 lb. Honey
1 tsp Irish moss at 15 minutes
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Chinook (12% AA, 45 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: 1056 American Ale Yeast used with a 1 pint first run mash starter
Log: Dry-hop with 2 ozs of Cascade pellets (what else is there for dryhopping??)
Carbonation: 2.2 volumes Keg: 9.0 psi @ 40°F
