Alcohol: 5.7% v/v (4.5% w/w)
Water: N.Y.S. Well water
Grain: 3 lb. American 2-row
3 lb. American 6-row
8 oz. Wheat malt
8 oz. Belgian aromatic
1 lb. British amber
8 oz. American crystal 20L
1 lb. Flaked corn
12 oz. Flaked oats
8 oz. Rice (raw)
Mash: 75% efficiency
30 min.@ 122°
30 min.@ 148°
30 min.@ 158°
10 min @ 168°
Sparge with 5 gallons 178°Water


Boil: 90 minutes SG 1.045 6.5 gallons
Boil for 1/2 hour then add 1st hop for 45 min.
add 2nd hop with 1 tsp Irish moss for 13 min.
add 3rd hop for 7 min. Cool to 70° Strain into fermenting pail. add 1 tsp. each acid blend / yeast nutrient
Hops: 1/2 oz. magnum (17% AA, 60 min.)
1/2 oz. Cascade (5.5% AA, 20 min.)
1 oz. sterling (7% AA, 7 min.)
Yeast: Wyeast 1056 in 1 quart starter
Log: Ferment for 1 week. Rack to glass for 2 weeks
then bottle (or keg)
Carbonation: I used 5 oz.corn sugar to 1 cup boiling water. then I add this to my botteling bucket
