Mash: 75% efficiency
START WITH 22 QUARTS WATER ADD GRAIN WHEN STRIKE TEMP. REACHES 170°, MASH AT 154° FOR 70 MINUTES. MASH OUT AT 168° FOR 10 MINUTES, SPARGE WITH 175°WATER FOR A TOTAL OF 9 GALLONS.
Boil: 70 minutes SG 1.054 9 gallons
ADD HOPS 10 MINUTES AFTER START OF BOIL AS DIRECTED,ADD IRISH MOSS LAST 15 MINUTES, DRY HOP IN SECONDARY.
Hops: 2 oz. Challenger (8.2% AA, 60 min.)
1 oz. Kent Goldings (5.1% AA, 30 min.)
1 oz. Cascade (4.5% AA, 5 min.)

Yeast: WYEAST # 1056 AMERICAN ALE (MAKE STARTER IN ADVANCE)
Log: PRIMARY FERMENTATION TEMP. AT 66 DEGREES FOR 10 TO 14 DAYS. RACK TO SECONDARY ADD 1 TSP. GELATIN MIXED WITH 16 OZ. BOILED WATER, DRY HOP 6-7 DAYS AFTER TRANSFER TO SECONDARY.HOLD FOR 14 TO 16 TOTAL DAYS.RACK TO BOTTLE OR KEG.AGE 10 TO 12 WEEKS
