A big, bold double IPA made with Chinook, Columbus and Warrior hops then aged on toasted oak.

Water: 2 tsp gypsum and 1 TBS 5.2 stabilizer in mash
Grain: 14 lb. American 2-row
2 lb. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
5 oz. Honey Malt
Mash: 70% efficiency
153F for 30 minutes. Decoction to reach 160F for additional 10. Sparge with 170F to reach 7.5 gal in brewpot.
Boil: 75 minutes SG 1.061 8.0 gallons
1 lb. 8 oz. Wildflower Honey
1 tsp Irish Moss last 15 minutes
Hops: 1 oz. Chinook (11.5% AA, 60 min.)
1 oz. Chinook (11.5% AA, 45 min.)
1 oz. Warrior (15.8% AA, 30 min.)
1 oz. Chinook (11.5% AA, 15 min.)
1 oz. Warrior (15.8% AA, 15 min.)
1 oz. Columbus (13.9% AA, 15 min.)
1 oz. Warrior (aroma)
1 oz. Columbus (aroma)
Yeast: WLP001 from a previous batch.
Log: Primary at 70F for 5-10 days. Secondary at 70F for 2 weeks with 1 oz chinook lead hops and 2 oz oak chips (steamed for sanitization).
Carbonation: 1.8 volumes Keg: 3.9 psi @ 38°F
