Red Maple Ale

This is a sipper beer. Flavor that one may enjoy sipping instead of guzzling...save the guzzling for your Bud, Miller, or Coors.

14 HCU (~9 SRM)
Bitterness: 14 IBU
OG: 1.052 FG: 1.012
Alcohol: 5.2% v/v (4.1% w/w)
Water: 5 gal distilled water used for boil and fermentation.
Grain: .5 lb. American 2-row
.5 lb. American crystal 20L
Steep: Steeped grains at about 150 deg for 15 min.
Boil: 60 minutes SG 1.192 1.5 gallons
3.3 lb. Light malt extract
1 lb. Maple syrup
3.3 lb. Amber malt extract
1/4 oz Irish moss added with aroma hops.
Hops: 1 oz. Centennial (9% AA, 60 min.)
1 oz. Willamette (5% AA, 30 min.)
.5 oz. Willamette (5% AA, 15 min.)
.5 oz. Willamette (aroma)
Yeast: Wyeast 1056 American Ale pitched on 29AUG99.
Carbonation: Retained 1/2 gal of wort for krausening. Bottled on 12OCT99 - F.G. was 1.014 with krausen added.
Tasting: Ready to enjoy after about three weeks in the bottle.
