Campfire Cream Ale

A great, light, crisp cream ale... my best attempt at a New Glarus spotted cow clone. Cascade hops bring out great citrus notes that go well with this beer.

Type: Extract w/grain Size: 5 gallons
Color:
7 HCU (~5 SRM)
Bitterness: 16 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Grain: 1 lb. American 2-row
.6 lb. Dextrine malt (Cara-Pils)
1 lb. Flaked corn
Steep: 30 minutes at 156-158° in 1.5 gallons of water. sparged (through steeping bags) with 1 gallon 170° water.
Boil: 60 minutes SG 1.100 2.5 gallons
3.3 lb. Light malt extract
2 lb. Light dry malt extract
used irish moss during last 15 minutes of boil to help clear it up.
Hops: .75 oz. Cascade (6.4% AA, 60 min.)
.25 oz. Cascade (6.4% AA, 30 min.)
.25 oz. Cascade (6.4% AA, 15 min.)
.25 oz. Cascade (aroma)
.5 oz. Tettnanger (aroma)
Yeast: Used Wyeast 1056, chico ale yeast. I used saved yeast in a mason jar from my first version of this recipe (changed hops from saaz to cascade) and had to make a starter, but have had success with just a simple smack pack for this recipe in the past.
Log: 10 days in primary at between 65-73°F.
7 days in a "Lagering" secondary in keg, not carbonated at around 40°
7 days in cold storage while carbonated in keg.
Carbonation: Force carbonated in keg
Tasting: first version was very good and had used saaz hops... changed it out this time for cascade and was extremely happy with the less pungent and more citrusy flavor... similar to new glarus' spotted cow cream ale.
