. for the smoked wheat malt i smoke wheat malt in a smoker i use beach wood chips and smoke the malt for 1 to 2 hrs continuoiusly until the grain takes on a smoky appearance . OR use wyerman smoked malt (rauchmalt)

Grain: .5 lb. Wheat malt
.25 lb. American victory
.5 lb. Rye malt
Steep: steep grains in 1 gal 165 deg f.for 30 min raise temp to 175 deg f for 10 min and sparge with 1.5 gals 180 deg f water
Boil: 60 minutes SG 1.133 2.5 gallons
6 lb. Light dry malt extract
1 lb. Amber dry malt extract
add malt extracts and bring to a boil boil for 1 hr hopping as you go. i cool by adding 2 gals of block ice to the fermenter, and dump the hot wort into the ice
Hops: 1 oz. Cluster (7% AA, 45 min.)
.5 oz. Eroica (12% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
2 oz. Saaz (3.75% AA, 15 min.)
2 oz. Cascade (aroma)
Yeast: white labs wlp051
