Cinnamon Honey Ale

A very good (and simple) amber ale that finishes clean. The honey gives it a crisp flavor, and there's just enough cinnamon to give a hint of a taste, not enough to be overpowering. This is not a sweet beer, don't let the honey fool you. It's pretty balanced with a lighter body.

Type: Extract Size: 5 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 36 IBU
OG: 1.052 FG: 1.015
Alcohol: 4.8% v/v (3.8% w/w)
Boil: 60 minutes SG 1.044 6 gallons
3.5 lb. Amber dry malt extract
2.5 lb. Honey
Don't boil the honey, add it at flameout.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (aroma)
Yeast: Any clean american ale yeast.
Carbonation: Haven't tried it force carbed, only naturally bottle carbed (3/4 c corn sugar).
Tasting: This beer should optimally condition for at least a month. It will be a little rough when young but the honey mellows and smooths out very nicely after a month of aging.
