This is for a 10 gallon yield (post ferment)all grain batch.

Beer: A&P Amber Style: American Amber Ale
Type: All grain Size: 12 gallons
Color:
36 HCU (~17 SRM)
Bitterness: 40 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.4% v/v (4.3% w/w)
Water: City water, charcoal filtered, but no treatment.
Grain: 18 lb. British pale
5 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
.25 lb. American chocolate
Mash: 70% efficiency
Mashed @ 152°F for 90 min with approx 6 gal water, just enough
to cover the grain bed. Stirred twice during the mash, then set the bed by recirculating (first by hand, then with pump)with 15 minutes to go in the mash.
Pumped mash wort to boil kettle, started burner, and started sparge with 170°F water till level in kettle reached 14 gal
Boil: 90 minutes SG 1.048 13 gallons
Three hop additions of Cascades in the 90min boil.
2oz at start for 45min, 2oz for 30min,& 2oz for 15min.
Add Irish moss & immersion chiller at final hop addition.
Using Columbus @ 13 alpha for dry hopping,instead of Chinooks.
Hops: 2.09 oz. Cascade (6% AA, 45 min.)
2.09 oz. Cascade (6% AA, 30 min.)
2.09 oz. Cascade (6% AA, 15 min.)
2 oz. Chinook (aroma)
Yeast: American Ale Yeast 1056.
No starter.
Used a "smack pack" at room temp, smacked 1 hr prior to pitching.
Log: Brewed 4/9/05.
Put carboy heater under plastic bucket fermenter.
Fermenting strong next AM.
