Fat Tire Clone (Spicy)

We tried to make a Fat Tire clone, like every other homebrewer has, but it turned out to be a very spicy, full-bodied ale that did not resemble Fat Tire at all. This beer will be perfect for the holidays.

Type: Extract w/grain Size: 5 gallons
Color:
51 HCU (~22 SRM)
Bitterness: 21 IBU
OG: 1.073 FG: 1.012
Alcohol: 7.9% v/v (6.2% w/w)
Water: Crystal Geyser
Grain: 8 oz. American crystal 20L
Steep: Steeped grains for 45' @ 180°
Boil: 60 minutes SG 1.122 3 gallons
7 lb. Amber dry malt extract
1 lb. Dark dry malt extract
Hops: 1 oz. Cascade (6.2% AA, 60 min.)
.5 oz. Centennial (10.5% AA, 60 min.)
0.5 oz. Centennial (aroma)
Yeast: Wyeast 1056- American Ale; pitched @ 78°
Log: Brewed on 5/29; primary fermentation end date-6/7; racked it over to secondary for 3 days and bottled on 6/10
Carbonation: Used corn sugar
Tasting: This beer needed some time in the bottle to balance spicy notes with hop and malt flavor. After 5 weeks it was excellent. (This has a lower original gravity than this page indicates, meaning it will have a lower alcohol content.)
