Flat Tire Amber

An atempt to clone New Belgium Brewery's
Fat Tire Ale in an all-grain recipe.

1 lb. American victory
.5 lb. Belgian biscuit
2 lb. American crystal 20L
.5 lb. American chocolate

Boil: 60 minutes SG 1.059 6 gallons

1 oz. Fuggles (4.75% AA, 5 min.)
Yeast: WLP001 - White Labs California Ale
Log: Primary fermentation at 65°F for low esters. Estimated time: 1 week.
Secondary planned for 2 weeks minimum at same temp.
Carbonation: 2.5 volumes Keg: 28.8 psi @ 70°F
Tasting: Primary fermentation was very active, I would highly sugest a blow-
off tube to anyone repeating this recipe.
Color and flavor were almost right-on with the original when I racked
to the secondary.

11/20/03 Bottled half of the batch and kegged the other half.
Very pleased with the results. Next time I will try a warmer
mash for a fuller mouth feel.

12/1/03 Once the beer was cooled and carbonated the mouth feel was
much improved. I am extremely happy with these results and wouldn't
change anything with this recipe. As a variation of this recipe I
might try dry hopping it next time with Fuggles in the secondary.
