12 HCU (~8 SRM)
Bitterness: 27 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.2% w/w)
Water: Bring 10 gal water to rolling boil for 15 minutes to remove chlorine.

Note: I am using hard water
Grain: 11.5 lb. American 2-row
1 lb. American crystal 60L
Mash: 82% efficiency
Step infusion mashing
Boil: 60 minutes SG 1.047 8 gallons
Bring to a rolling boil before adding hops and taking time measurements.
Hops: 0.5 oz. Kent Goldings (5% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
0.5 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Saaz (3.75% AA, 30 min.)
1 oz. Fuggles (aroma)
1 oz. Saaz (aroma)
Yeast: Yeast 1338
Log: Save 1/2 gal of wart for krausening. Put remaining 6.5 gal into glass
carboy and dry hop. Let it ferment for 7 days. I pump the ferment
to a second carboy using a C02 system to eliminate oxigination.
Add the krausen to carboy and let it ferment for another 7 days.
Carbonation: Pump ferment from secondary fermentor to carboy using CO2 sytem.
At this stage I add an inline filter consisting of a tube filled with
a hop bag. This is to assure that no trub will make it to the keg.
Let keg age for 2-4 weeks in a cool place.
