Water: 1 tsp gypsum in mash water (15 gal)
1.5 TB lactic acid in sparge water (15 gallons)
Grain: 23 lb. American 2-row
1 lb. American crystal 75L
1 lb. American crystal 120L
1 lb. 8 oz. Dextrine malt (Cara-Pils)
8 oz. American chocolate
Mash: 60% efficiency
Mashed in at 152°.
Starched converted, checked at 60 min.
154° at end of Mash.
Sparge water 182° for 60 minute sparge. 178° at end
Collected 14 gallons.
Boil: 60 minutes SG 1.042 14 gallons
2 tsp Irish Moss
1 tsp yeast nutrient (diammonina phosphate)
Hops: 2 oz. Chinook (12.5% AA, 60 min.)
2 oz. Cascade (7% AA, 15 min.)
Yeast: 2 vials White Labs California Ale Yeast

Fermentation temperature 68° - 70°
No secondary, transferred to Corny kegs after 2 weeks.
Dry Hopped with 2 oz Cascade
Carbonation: 2.4 volumes Keg: 8.2 psi @ 34°F
