Bumbel Juice

Brewed for Christmas in honor of the Abominable Snowman

Type: All grain Size: 5 gallons

48 HCU (~21 SRM)
Bitterness: 82 IBU
OG: 1.064 FG: 1.010
Alcohol: 7.0% v/v (5.5% w/w)
Water: 2 t gypsum in mash
Grain: 8 lb. British pale
1 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
8 oz. Eng 2 row Smoked
8 oz. American chocolate
Mash: 80% efficiency
Mash in with 3 gals for 120š protein rest for 30 mins

Add 1-2 gals 200š to raise to 155 for 60 mins, or until conversion is complete.
Boil: 75 minutes SG 1.050 6.5 gallons
Irish moss for last 5 mins of boil
Hops: 1 oz. Perle (6.0% AA, 75 min.)
1 oz. Chinook (12.0% AA, 45 min.)
1 oz. Centennial (10.5% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast 1084 Irish Ale

Wyeast 1056 Harvested from previous batch

pitched in 1 qt starter at high krausen
Log: Fermented @ 65š for 5 days. Transferred to secondary for 7 days.
Carbonation: 4 ozs corn sugar to prime
Tasting: Nice clear amber color, good citrusy aroma, initial maltiness with a strong bitter finish.
