Water: Filtered hard city water
Grain: 14 lb. American 2-row
16 lb. German Munich
1 lb. American crystal 60L
1 lb. American crystal 90L
10 oz. British chocolate
2 lb. British black patent
2 lb. Roasted barley
3 lb. Flaked barley
Mash: 77% efficiency
mash @ 153 for 60 mins
Boil: 60 minutes SG 1.047 23 gallons
IM @ 15 mins.
Hops: 2 oz. Northern Brewer (7.9% AA, 60 min.)
1 oz. Centennial (10.5% AA, 60 min.)
3 oz. Fuggles (4.75% AA, 30 min.)
Yeast: WY1056
Log: Ferment @62-64 F for 2 weeks. Keg 14.5 gallons and bottle 4.5. No secondary.
Carbonation: Bottle w/ 3 oz. cane sugar for 2.3 volumes CO2.
Tasting: Nice sweet stout going into bottles. A milling mistake gone right. Note to self, pay attention to the labels on your grain bins so you don't grab Munich instead of 2 row. Good thing the mill hopper only holds 16 lbs at once! We'll see how she fares in competition.
