Puppy Shark Stout 2.0

Puppy Shark Stout - Sweet like a puppy...bite like a shark. My wife, the non-drinker, named this one.

Beer: Puppy Shark Stout 2.0 Style: Sweet Stout
Type: Extract w/grain Size: 5 gallons
Color:
309 HCU
Bitterness: 35 IBU
OG: 1.067 FG: 1.015
Alcohol: 6.7% v/v (5.3% w/w)
Water: Bottled spring water from the supermarket. Add approximately 2 tbsp each gypsum and burton salt to boil. More or less to suit your water usage.
Grain: 1 lb. British crystal 135-165L
1 lb. British chocolate
1 lb. Roasted barley
Steep: Steep grains in 3.5 US gallons water for 30 minutes at 150-170°F. Remove before boil.
Boil: 60 minutes SG 1.096 3.5 gallons
6 lb. Dark dry malt extract
12 oz. Molasses
Add 4oz baker's cocoa powder to boil. For extra creaminess, add 8oz malto-dextrine to boil. Irish moss 15 minutes to end of boil.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: White Labs WLP005-British Ale
Log: Primary ferment for 1 week. Transfer to secondary and ferment for 10-14 days. Boil 8oz lactose with priming sugar at bottling. Bottle condition for at least 2 weeks before trying the first one.
Carbonation: 3/4 cup corn suger boiled in 16 oz water.
Tasting: More hop profile than the original Puppy Shark. Very sweet, coffee, roasted, and full bodied. If you want to cut back on the sweetness a bit, do not use the malto-dextrin or lactose.
