Alcohol: 5.6% v/v (4.4% w/w)
Water: 1/2 tsp gypsum in mash and sparge water
Grain: 10 lb. British pale
1 lb. American chocolate
4 oz. American black patent
1 lb. Roasted barley
2 lb. Flaked oats
Mash: 75% efficiency
135° for 30 mins.
156° for 60 mins.
Boil: 90 minutes SG 1.048 8 gallons
1/2 tsp Irish Moss last 15 mins.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.5 oz. Northern Brewer (8.7% AA, 30 min.)
Yeast: Irish Ale yeast WLP004. This is the yeast from one of the oldest stout producing breweries in the world. It produces a slight hint of diacetyl, balanced by a light fruitiness and slight dry crispness.
