Grain: 9 lb. American 2-row
2 oz. American crystal 60L
3 oz. British chocolate
8 oz. British black patent
8 oz. Roasted barley
2 lb. Rolled oats
6 oz. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
lightly toast one pound of oats for 10-20 minutes in a 400 degree oven a few days before brewing, and this adds a wonderful depth to the beer. I also roasted my own 2-row malt. 1/4 pound for 15 minutes, 1/8 for 30, and 1/8 for 45. You must do this a week or two before brewing to allow flavors to mellow, but I highly recommend it.
mash @ 153 for 60 mins
Boil: 60 minutes SG 1.048 6.5 gallons
IM @ 15 mins.
Hops: .5 oz. Centennial (10.1% AA, 60 min.)
1 oz. Fuggles (4.3% AA, 30 min.)
Yeast: wlp004 with starter
Log: Ferment @62-64 F for 2 weeks.
Carbonation: 2.2 volumes Keg: 18.8 psi @ 60°F
