Beulah's Choc Ale

Type: Extract w/grain Size: 5.5 gallons
Color:
120 HCU (~40 SRM)
Bitterness: 19 IBU
OG: 1.066 FG: 1.016
Alcohol: 6.5% v/v (5.1% w/w)
Water: up to 1 Tbsp Gypsum
Grain: 1/2 lb. American crystal 90L
1/2 lb. American chocolate
1/4 lb. Roasted barley
1/4 lb. Smoked barley
Steep: Add grain to 1.5 gal water and bring to 160°. Turn of heat.
Steep 30-45 minutes. Rinse with up to 1/2 gallon water.
Boil: 60 minutes SG 1.145 2.5 gallons
3 lb. Amber dry malt extract
5 lb. Dark malt extract
1 lb. Brown sugar
Add up to 1 oz. malto-dextrin. Add 2 oz. cocoa powder
Add a TSP Irish Moss
Hops: 1 oz. Styrian Goldings (4.1% AA, 60 min.)
1 oz. Styrian Goldings (4.1% AA, 45 min.)
0.5 oz. Willamette (5.1% AA, 45 min.)
1 oz. Willamette (5.1% AA, 15 min.)
0.5 oz. Willamette (aroma)
Yeast: Irish liquid Ale Yeast w/Pitch.
Tasting: The 1st recipe had Northern Brewer Hops. Very tasty. Attempted to
add German hop flavor and slightly less bitterness. I made change
to Williamette.
