Rondo Mondo Stout

Type: Extract Size: 5 gallons
Color:
65 HCU (~26 SRM)
Bitterness: 41 IBU
OG: 1.102 FG: 1.020
Alcohol: 10.5% v/v (8.3% w/w)
Water: Do whatever you normally do. Everyone's water is different...
Boil: 60 minutes SG 1.169 3 gallons
6.6 lb. Dark malt extract
4 lb. Brown sugar
2 lb. Honey
Hops: 2.5 oz. Target (11% AA, 60 min.)
1 oz. Kent Goldings (5.5% AA, 30 min.)
1 oz. Kent Goldings (5.5% AA, 15 min.)
Yeast: You'll want a high attenuation, high tolerance english ale yeast.
Tasting: You should probably either remove the honey (if you don't like honey taste) or double it (if you do). The end result had very little honey taste.

Might try adding some yeast nutrient to the cooled wort, since there is so much adjunct involved. I didn't and the result wasn't quite as dry as I would have liked.
