BALTIC "IMPERIAL" PORTER

This is going to be my attempt at a Baltic or Imperial style Porter such as Okocim, Zywiec, Saku, Carnegie, Utenos or the American Perkunos Hammer from Heavyweight Brewing in NJ

Bitterness: 23 IBU
OG: 1.076 FG: 1.014
Alcohol: 8.0% v/v (6.3% w/w)
Grain: 7 lb. American 2-row
1 lb. German Vienna
3 lb. German Munich
1 lb. American crystal 120L
1 lb. American chocolate
4 oz. American black patent
Mash: 80% efficiency
Step infusion/decoction
Whole mash grist: 90°-20 min, 120°-20 min, 155°-60 min*, 170°-10 min

*During 155° long conversion remove 2 quarts of mash and bring to strong boil for 20 min for decoction caramelization
Boil: 60 minutes SG 1.076 5 gallons
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
Yeast: Mix of Wyeast 1187 Ringwood and 2206 Bavarian Lager
Carbonation: 2/3 cup dark brown sugar
