Czaravitch Imperial Stout

This ended up being one of the best I've made.

Type: All grain Size: 10 gallons
Color:
223 HCU
Bitterness: 71 IBU
OG: 1.095 FG: 1.032
Alcohol: 8.1% v/v (6.4% w/w)
Water: I used tap water ran through a charcoal filter to remove
clorine and floride
Grain: 27 lb. Belgian pale
2 lb. Dextrine malt (Cara-Pils)
2 lb. Belgian CaraMunich
1 lb. American black patent
1 lb. Belgian chocolate
2 lb. Roasted barley
Mash: 75% efficiency
Mashed at 150° for 90 min raised temp to 170° for 15min
Sparged until I reached 12 gallons.
Boil: 90 minutes SG 1.079 12 gallons
8 oz. Molasses
Irish Moss added last 15 min of boil.
Hops: 3.5 oz. Cluster (7% AA, 90 min.)
1 oz. Fuggles (4.75% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
1.5 oz. Fuggles (4.75% AA, 15 min.)
1.5 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Fuggles (4.75% AA, 5 min.)
.5 oz. Kent Goldings (5% AA, 5 min.)
1 oz. Fuggles (aroma)
1 oz. Kent Goldings (aroma)
Yeast: Made a starter with dme and Wyeast 1728 Scottish
In primary for 2 weeks then added Lavin EC1118 to
finish out fermentation.
Carbonation: Added 1.5 cups corn sugar bottled conditioned
Tasting: After 1 week in the bottle, light carbonation present,
fantastic complex brew good ballance hops and sweetness.
Should age well.
