Chocolate Raspberry Lightning

Hopefully this will be a well balanced chocolate raspberry imperial stout.
i'm using rasperry puree at a rate of 1.44pd per gallon. i'm also going
to use 3/4 of a cup of ghiraldeli unsweetened cocoa powder. i usually
use 1/2 cup but figure with this mega brew i'll need more. i'm doing a
test batch of 2 gallons this week so i'll now how it turns out.

Beer: Chocolate Raspberry Lightning Style: Imperial Stout
Type: All grain Size: 5.5 gallons
Color:
126 HCU (~41 SRM)
Bitterness: 71 IBU
OG: 1.086 FG: 1.025
Alcohol: 7.9% v/v (6.2% w/w)
Water: 2 tsp gypsum.
Grain: 15 lb. British pale
1 lb. Dextrine malt (Cara-Pils)
2 lb. British crystal 70-80L
1 lb. Flaked barley
1 lb. Roasted barley
Mash: 65% efficiency
infusion mash at 152F for 60 minutes or until conversion.
Boil: 60 minutes SG 1.073 6.5 gallons
2tsp irish moss added when there is 10 minutes left to boil.
3/4 cup ghiraldelli unsweetened cocoa with 5 minutes left.
Hops: 2.0 oz. boullion (9% AA, 60 min.)
.5 oz. boullion (9% AA, 45 min.)
1 oz. kent goldings (4.5% AA, 30 min.)
1 oz. kent goldings (aroma)
Yeast: will probably use wyeast 1056 or wyeast british ale II
Log: will brew test batch this weekend.
will add raspberries to secondary.
Carbonation: 2.0 volumes Keg: 11.3 psi @ 50°F
Tasting: hopefully this will be a great beer the will be ready to drink around the end
of summer.
