Polish Imperial Super Stout

Color:
306 HCU
Bitterness: 26 IBU
OG: 1.103 FG: 1.020
Alcohol: 10.6% v/v (8.4% w/w)
Water: Used Bottled water
Grain: 1 lb. American black patent
1 lb. Roasted barley
Steep: Added the grains to 3 gallons of water and brought to a boil then removed the grains.
Boil: 60 minutes SG 1.171 3 gallons
13 lb. 4 oz. Dark malt extract
After steeping the grains I added the extracts and brougth to a boil.
When it reached a boil I added the bittering hops. With fifteen minutes left I added the aroma hops and a teaspoon of irish moss.
Hops: 2 oz. Northern Brewer (8.5% AA, 60 min.)
2 oz. Kent Goldings (5% AA, 15 min.)
Yeast: I used Wyeast London Ale liquid yeast
Log: Primary fermentaton lasted one week at 70 deg. Secondary fermentation lasted 2 weeks. I bottled and sampled after one month. The bottles that were left after 6 months tasted fantastic.
Tasting: The prefect mixture of maltiness, bitterness, and taste of alchohol. Tasted more like a wine then an ale.
