Type: All grain Size: 4.75 gallons
Color:
194 HCU
Bitterness: 38 IBU
OG: 1.053 FG: 1.012
Alcohol: 5.3% v/v (4.2% w/w)
Water: Boiled Philadelphia tap water.
Grain: 7 lb. British pale
4 oz. Wheat malt
.75 lb. British chocolate
1 lb. Roasted barley
1 lb. Flaked barley
Mash: 70% efficiency
152°F for 2 hours with 3.25 gallons of water.
Sparge lasted about 45 minutes with 5 gallons of 170°F water.
Boil: 90 minutes SG 1.042 6 gallons
Hops: 1 oz. Target (8.8% AA, 60 min.)
Yeast: Wyeast 1084 XL pack. No starter.
Log: Brewed on Jan. 29, 1999.
Primary @ 68°F for seven days.
Secondary @ 68°F for fifteen days.
Bottled on Feb. 19, 1999.
Half went into a Party Pig and the rest in 12 ouncers.
Carbonation: 2.0 volumes Corn Sugar: 2.90 oz. for 4.75 gallons @ 68°F
Tasting: The Pig was ready to go after a week.
The beer has a really dense head that doesn't give up.
The taste is just outstanding. Roasty and malty up front with
a nice firm bitterness. A bit of sweetness accompanied by
a nice dark chocolate character in the middle
and a pleasant roatiness in the finish that stays with you
until the next gulp. It has a nice hearty body that backs
all of this up very well.
I hope the bottles will be this good.
I don't think this batch has a long future.
