Wolfmans' Irish Dry Stout

Roasty, Toasty, Smooth, and Creamy!!!

Type: All grain Size: 5 gallons
Color:
121 HCU (~40 SRM)
Bitterness: 42 IBU
OG: 1.065 FG: 1.014
Alcohol: 6.6% v/v (5.2% w/w)
Water: No special treatment, just tap water left out overnight.
Grain: 5 lb. American 6-row
8 oz. Belgian Special B
1 lb. British crystal 50-60L
8 oz. American chocolate
8 oz. Roasted barley
1 lb. Flaked rice
2 lb. Flaked rye
1 lb. Flaked wheat
Mash: 82% efficiency
Single infussion mash, 90 min. for conversion at 153. Then sparge as normal.
Boil: 60 minutes SG 1.054 6 gallons
Heated wort to hard boil, then set the timer, with hop additions accordingly.
Hops: 1 oz. Northern Brewer (9.9% AA, 60 min.)
1 oz. Hallertauer (3.5% AA, 30 min.)
Yeast: White Labs liquid Irish Ale Yeast... well worth the money folks..
Log: One week in the primary. Two weeks in the secondary. Four weeks to bottle condition.
Carbonation: 3/4 cup of corn sugar.
Tasting: Excellent Dry Irish Stout... Nice color, good head retention. The smooth creamy texture, and full bodied flavors, make this quite possibly the best beer I have designed (better yet-brewed) to date.
