Jimmy's Southie Stout

A second attempt at a guiness like stout. The first attempt was very good, and we were extremely pleased with the turnout, though we thought it could have been a bit smoother and significantly creamier.

Type: Extract w/grain Size: 5 gallons
Color:
138 HCU (~44 SRM)
Bitterness: 34 IBU
OG: 1.057 FG: 1.011
Alcohol: 5.9% v/v (4.7% w/w)
Grain: .5 lb. British crystal 50-60L
.75 lb. British chocolate
.5 lb. British black patent
4 oz. Flaked barley
4 oz. Aciduated Malt
2 oz. Special Roasted Malt
Steep: Added a chocolate grain to make it smoother, added aciduated malt and a crystal 60 to attempt to make it creamier.
Boil: 60 minutes SG 1.114 2.5 gallons
7 lb. Light malt extract
1/2 teaspoon of irish moss added at 15 minutes.
Hops: 1.75 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast 1084 Irish Ale Yeast
Log: Planning on using dry malt extract in place of priming sugar, again, in an attempt to make the beer creamier.
