Guinness ala Skotrat 15 gallons

I have always been fascinated with Guinness Draught Stout and this
is just another attempt at making it...

Very nice and creamy on my Nitro Guinness tap.

Beer: Guinness ala Skotrat 15 gallons Style: Irish Dry Stout
Type: All grain Size: 15.5 gallons
Color:
164 HCU (~49 SRM)
Bitterness: 36 IBU
OG: 1.044 FG: 1.010
Alcohol: 4.4% v/v (3.5% w/w)
Grain: 16 lb. American 2-row
5 lb. Roasted barley
5 lb. Flaked barley
Mash: 77% efficiency
2 step mash:

30 minutes @ 122f
90 minutes @ 152f
10 minutes @ 166f
Boil: 90 minutes SG 1.034 20 gallons
Hops: 3.5 oz. Bullion (7.0% AA, 60 min.)
Yeast: I used a 1/2 gallon starter of WYEAST Irish Ale yeast
Log: I soured 1 liter of wort for the entire primary fermentation and added
the soured at kegging time (14 days) I boiled the sour mash before adding
equal amounts to each of the 3 cornies
Carbonation: I low carbed (forced) with Co2 and served with my beverage mix at 35psi
at 36f
Tasting: Excellent roasty and creamy. A fine example of a classic dry Stout.
