Bitterness: 74 IBU
OG: 1.062 FG: 1.016
Alcohol: 6.0% v/v (4.7% w/w)
Grain: 20 lb. English Pale Ale
1 lb. Roast Barley
1 lb. 8 oz. Black Patent
2 lb. Flaked Barley
Mash: 70% efficiency
Bring to 150-155 for 90 min. or until starch end pt.
Mash out at 200-210
Sparge with 175 deg. liquor.
Boil: 90 minutes SG 1.048 13 gallons
Hops: 4 oz. Northern Brewer (7.7% AA, 60 min.)
1 oz. Northern Brewer (8% AA, 60 min.)
Yeast: White Labs Irish Ale WLP004. 1 quart starter started 24 hours befor pitching.
Log: Primary fermentation 7 days, secondary 1 week
Carbonation: 2.0 volumes Dried Malt Extract: 10.8 oz. for 10 gallons @ 70°F
Dried Malt Extract: 10.8 oz. for 10 gallons @ 70°F if bottling
1/2 cup corn sugar if draft. If you can get nitrogen instead of CO2 for draft, it gives a creamy head.
