Guiness Clone I

Brfore the boil, save 2 qts. of wort and 1 cup of spent grain. Mix wort and grain in a gallon jug, let sit 24 hours until a lactic fermentation develops. After fermentation has begun in gallon container, add 1 cup of fermenting wort to container. When primary fermentation is complete for both portions, boil sour beer, cool and add to 5 gallon secondary fermentation vessel for secondary fermentation.

OG: 1.040 FG: 1.011
Alcohol: 3.8% v/v (3.0% w/w)
Water: Carbon filtered west Houston tap water to which 1/4 tsp.. gypsum added to the wort.
Grain: 7 lb. American 2-row
.5 lb. Dextrine malt (Cara-Pils)
1.25 lb. Roasted barley
1 lb. Flaked barley
Mash: 65% efficiency
Add 9 qts. 130° water to mash and hold at 124° for 30 minutes. Add 3 qts. boiling water, stir to bring mash to 150° for 1 hour; add heat if necessary. Sparge with 4 gallons of 170° water.
Boil: 120 minutes SG 1.032 7 gallons
1 tbs. Irish Moss added to wort 15 minutes before end of boil.
Hops: 1 oz. Bullion (8.5% AA, 45 min.)
.5 oz. Kent Goldings (5% AA, 45 min.)
Yeast: 1 ltr. wyeast #1028 (London Ale).
