Bagheera's India Stout

If they had shipped a dark ale to the British Empire in India instead of just pale ale, maybe it would have been something like this - a dark beer for a black panther. Not officially a stout, since there's no roasted or chocolate grain, but technically dark enough, and definitely bold enough to qualify. Part of my on-going experiment in combining the complexity of modified grains with lots of hops.

64 HCU (~26 SRM)
Bitterness: 126 IBU
OG: 1.074 FG: 1.013
Alcohol: 7.9% v/v (6.2% w/w)
Water: Memphis tap water, which in my neighborhood has virtually no dissolved ions (Memphis tap water comes from artesian wells, and is actually very good). To approximate British Isles conditions I add 4tsp. Calcium Carbonate and 2tsp gypsum.
Grain: 7 lb. Belgian pale
1 lb. American victory
1 lb. American crystal 90L
2 lb. Belgian CaraMunich
Mash: 85% efficiency
1st rest at 140F for 45 min, then 156F for 45 min
Boil: 90 minutes SG 1.061 5.5 gallons
45 minutes at 140F then 45 minutes at 156F
Hops: 2 oz. Fuggles (5.2% AA, 60 min.)
2 oz. Northern Brewer (8.6% AA, 60 min.)
2 oz. Kent Goldings (5.8% AA, 30 min.)
2 oz. Fuggles (aroma)
Yeast: Wyeast London III 1318
Log: I'm going to try "Full Wort Hopping" 2oz. of Fuggles flower in a boiling bag while sparging. I really want the classic English hops to dominate this recipe. Hopefully the modified grains can keep up....
Carbonation: 2/3 cup of Munton's Dark DME
