Mr. Sammy's Stout Hearted Brew

An attempt at a Guinness but came out stronger and sweeter.

Type: Partial mash Size: 5 gallons
Color:
80 HCU (~30 SRM)
Bitterness: 28 IBU
OG: 1.043 FG: 1.020
Alcohol: 2.9% v/v (2.3% w/w)
Water: 1 tsp. at the boil for 60 minutes.
Grain: 2 lb. American 2-row
.25 lb. American black patent
.5 lb. Roasted barley
1 lb. Flaked barley
Mash: 75% efficiency
Mashed grains for 60 min at 155F in 5 qts. water. . Sparged with 2 gal. water at 170F.
Boil: 60 minutes SG 1.057 3.75 gallons
3 lb. 3 oz. Light malt extract
John Bull Pale Malt Extract added just before boil.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
Yeast: Wyeast 1968 -London ESB Ale. Starter used.

OG - 1.070
Secondary - 10/25/97
Second Gravity Reading - 1.021
Bottled 11/8/97
F.G. - 1.020
Carbonation: Primed with 1.5 cups Pale Dry Malt (lite).

Tasting: 11/8/97 - Tasted at bottling. Sweet.
11/29/97 - Tasted. Nice flavor but still not carbonated enough.
1/14/98 - Aging and mellowing nicely. Carbonation is good. Head brown and beautiful.
