Alcohol: 5.5% v/v (4.3% w/w)
Grain: 8 oz. British crystal 70-80L
4 oz. British chocolate
Steep: Grains steeped for 30 min at 150°F
Boil: 60 minutes SG 1.091 3 gallons
6 lb. Light malt extract
1 lb. Honey
1/2 tsp Irish moss 30 min into boil.
***Add honey at the end of the boil***
Hops: 1 oz. Chinook (12% AA, 60 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast London Ale III (#1318) 1 pint slurry
Log: Primary for 7 days, racked to secondary for two weeks.
Primed with corn sugar and bottle aged for 21 days.
Tasting: Beer has a subtle, nutty aroma with a smooth honey taste.
