Bitterness: 35 IBU
OG: 1.040 FG: 1.015
Alcohol: 3.3% v/v (2.6% w/w)
Water: Added 1 tsp of gypsum to the mash water
Grain: 9 lb. American 2-row
1 lb. American Munich
8 oz. American crystal 90L
8 oz. American chocolate
4 oz. American black patent
Mash: 50% efficiency
Mash water was heated to 180° which yielded a strike water temp of 152°. Held at that temp for 1.5 hours then sparged 5 gallons of 165° water.
Boil: 60 minutes SG 1.031 6.5 gallons
Added 1 tsp of Irish Moss at the last 15 minutes of the boil
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
Yeast: Irish Ale 1084
Log: Fermented at 64° for 5 days. Fermentation actually ended after 3 days. Racked into secondary fermenter and cooled to 46° for 5 days to settle the beer.
Carbonation: Cardonated the beer for 2 days at 25lbs. Reduced to 9lbs for dispensing
Tasting: My favorite receipe, especially for the winter months. Good roasted chocolate flavor with little after taste.
