Alcohol: 6.0% v/v (4.7% w/w)
Water: Add Gypsum to sparge and strike water as needed
Grain: 20 lb. British pale
8 oz. Belgian biscuit
1 lb. American crystal 20L
1 lb. Dextrine malt (Cara-Pils)
1 lb. American chocolate
1 lb. American black patent
Mash: 70% efficiency
Infusion mash at 153°F for one hour with 1qt/lb of water.
Boil: 60 minutes SG 1.053 12 gallons
Add Irish Moss with 20 min left in boil.
Hops: 1.0 oz. Galena (13% AA, 60 min.)
1.5 oz. Cascade (6% AA, 30 min.)
1.5 oz. Tettnanger (4.5% AA, 5 min.)
Yeast: Pitch a 1 liter starter of White Labs East Coast Ale
