Bitterness: 26 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.5% v/v (3.5% w/w)
Water: Approx 1 Tbls CaCl2 added in to strike/sparge tank.
Grain: 15 lb. British pale
1 lb. Dextrine malt (Cara-Pils)
.5 lb. British crystal 90lv
1 lb. American chocolate
4 oz. American black patent
1 lb. Flaked barley
.5 lb. CaraMunich I
.5 lb. CarAmber
Mash: 75% efficiency
Dough in grain, temp 65°C hold 10 min. add more water
temp 6765°C. start recirculation pump. recirculate
for 20 min. begin the sparge.
Boil: 70 minutes SG 1.041 13 gallons
2 whirl flocs added at 15 min.
Good shot of 02 after chilling.
Hops: 3 oz. Kent Goldings (5% AA, 60 min.)
2 oz. Kent Goldings (aroma)
Yeast: Weast 1098 British Ale. 400 ml starter
culture was innoculated with about 200ml
of sediment from previous fermenting beer.
Vigorous ferment next morning.
