Steep: Steep grains at no more than 160 F for 30 min.
Boil: 60 minutes SG 1.073 4 gallons
6 lb. Dark dry malt extract
1 oz Irish moss with 20 min left in the boil.
Hops: 2 oz. Mt. Hood (4.5% AA, 60 min.)
.5 oz. Willamette (5% AA, 30 min.)
.5 oz. Willamette (5% AA, 15 min.)
.25 oz. Willamette (aroma)
Yeast: Wyeast Irish ale, with a twice-stepped starter.
Carbonation: 1.9 volumes Corn Sugar: 2.75 oz. for 4.8 gallons @ 70°F
