Bitterness: 22 IBU
OG: 1.059 FG: 1.020
Alcohol: 5.0% v/v (3.9% w/w)
Water: 5 gallons purified water
Grain: 1 lb. American chocolate
Steep: After bringing 2 gal. of water to boil, let cool to 150-160°. Steep 1lb. of American Chocolate Malt at that temperature range for 90 mins.
Boil: 65 minutes SG 1.147 2 gallons
4 lb. Dark malt extract
3 lb. Amber dry malt extract
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Eroica (12% AA, 30 min.)
Yeast: White Labs Irish Ale pitchable culture.
(I believe it is WLP-004)
Log: Primary fermentation: 5-7 days at 66-72°
Secondary Fermentation: 5-7 days at 66-72° (for extra kick pitch packet of dry wine or champagne yeast)
Bottle Condition: 3 weeks to 1 month, at least.
Carbonation: 2.0 volumes Dried Malt Extract: 5.40 oz. for 5 gallons @ 70°F
