Water: use de-ionized, filtered drinking water from grocery store
Grain: 8 lb. American 2-row
1/8 lb. Belgian aromatic
1/4 lb. Belgian biscuit
1 lb. American crystal 20L
1/4 lb. Belgian Special B
3/4 lb. American chocolate
1/2 lb. American black patent
1/2 lb. Roasted barley
Mash: 70% efficiency
Single infusion at 152° for 90 min
Mash-out rest at 165° for 30 min
Sparge with 168° for 40 min
Boil: 60 minutes SG 1.051 5.5 gallons
Hops: 1/2 oz. Chinook (12% AA, 60 min.)
1/2 oz. Cascade (6% AA, 30 min.)
1/2 oz. Liberty (4% AA, 15 min.)
1/2 oz. Mt. Hood (aroma)
Yeast: White Labs - East Coast Ale Yeast
Log: Ferment for 5 days @ 68F
Rack to secondary and add aroma hops (1/2 oz Mount Hood)
Ferment for another week @ 70F
Carbonation: Bottle using 5oz Wheat DME to prime
Tasting: hopefully it will turn out tasty
