Brewed with all homegrown hops harvested and dryed the first week of September. Alpha acids are unknown.

Grain: 18 lb. American 2-row
1 lb. American Vienna
2 lb. American Munich
2 lb. British crystal 70-80L
1 lb. Roasted barley
8 oz. Flaked wheat
1 lb. Carahell
8 oz. American black patent
1 lb. American chocolate
Mash: 75% efficiency
Single step infusion @ 155°F
Add 2 tsp. Gypsum to mash water.
Add 2 tsp Gypsum to sparge water.
Boil: 80 minutes SG 1.075 13 gallons
6 lb. Honey
Add 2 oz Burton water salts @ 60 minutes.
Add Add honey @ 50 minutes.
3 tsp. Irish Moss @ last 15 minutes of boil.
Hops: 1 oz. Chinook (12% AA, 80 min.)
1 oz. Cascade (6% AA, 45 min.)
1 oz. Tettnanger (4.5% AA, 30 min.)
.25 oz. Saaz (3.75% AA, 10 min.)
3 oz. Willamette (5% AA, 10 min.)
