A nice robust porter. Good mouth feel. Moderate alchohol. Quite dark and quite hoppy for the style. Grains were ground perhaps finer than normal, which may account for the relatively high O.G. Yeast used was White Labs WLP004 Irish Ale which gave a rousing ferment. Actual O.G. was 1.096 using a lab grade hydrometer; F.G. was 1.020, right where Chris White said it would be. One week in fermenter, one week in secondary. Drinkable any time.

Bitterness: 40 IBU
OG: 1.065 FG: 1.020
Alcohol: 5.8% v/v (4.5% w/w)
Water: Makeup and sparge water was boiled and cooled. Ph was 6.6.
Grain: 1 lb. American crystal 60L
1 lb. American chocolate
Steep: Grains were steeped 30 minutes at 170F in grain bag.
Boil: 60 minutes SG 1.108 3 gallons
8 lb. Amber malt extract
One tablespoon Irish Moss at beginning of boil.
Hops: 1.5 oz. Northern Brewer (8.5% AA, 60 min.)
1.5 oz. Willamette (5% AA, 30 min.)
0.5 oz. Northern Brewer (8.5% AA, 15 min.)
0.5 oz. Willamette (5% AA, 15 min.)
Yeast: White Labs WLP004 Irish Ale, with one pint starter.
Log: Brew date: 2/29/00; Ferment temp was 70F ;one week in fermenter, one week in secondary.
Carbonation: 330g (3/4 cup) corn sugar added at bottling.
Tasting: Tastes great to a hophead! Won't change a thing!
