Old P

Two trips to Wales this summer where I had Old Peculier from a handpump
at The Blue Anchor Inn, prompted me to brew this.

Brewer: Tom Fries Email: tfries@hdvs.com
Beer: Old P Style: English Old/Strong Ale
Type: All grain Size: 5.5 gallons
Color:
65 HCU (~26 SRM)
Bitterness: 36 IBU
OG: 1.058 FG: 1.010
Alcohol: 6.2% v/v (4.9% w/w)
Water: Sparge water pH was adjusted to 5.6 using Lactic Acid.
Grain: 7 lb. British pale
1.2 lb. British crystal 95L
1 lb. Torrified wheat
6 oz. British black patent
Mash: 75% efficiency
Mashed in 12 qts water at 151° for 90 minutes.
Boil: 105 minutes SG 1.046 7 gallons
14 oz. Demerera sugar
8 oz. Black Treacle - last 5 minutes of boil
Irish Moss added for last 30 minutes.
Hops: .75 oz. Challenger (7.5% AA, 45 min.)
1 oz. Fuggles (5.3% AA, 45 min.)
1 oz. Fuggles (5.3% AA, 5 min.)
Yeast: Wyeast 1968 London ESB in quart starter.
Log: Brewed 8/16/98
Primary 1 week in plastic at 80°
Secondary 1 week in glass at 80°
Kegged 8/29/98
Carbonation: Primed with 1/3 Black Treacle
Tasting: When I racked the beer to the secondary, I felt that the body was a
little thin, so I added 2oz. of dextrin powder. This did improve the
body. Next time I will use some CaraPils malt in the mash.

From the tap, this is a nice Old Ale, very simular to Old Peculier,
not too bitter, but with a nice hop finish. The treacle flavors come
through nicely and the wheat give it a nice head.
