Base Honey Old Ale

I use a base of Alexander's Pale LME (8#) and 60L Crystal (1#) for
most of my beers, adding different adjuncts just to see what they'll
do.

Beer: Base Honey Old Ale Style: English Old/Strong Ale
Type: Extract w/grain Size: 5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 29 IBU
OG: 1.072 FG: 1.016
Alcohol: 7.3% v/v (5.7% w/w)
Grain: 1 lb. American crystal 60L
Steep: Crystal steeped for 35 min @ 155 F.
Boil: 60 minutes SG 1.145 2.5 gallons
8 lb. Alexander's Pale malt extract
1 lb. 4 oz. Orange Blossom Honey
Hops: 2 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Cascade (6% AA, 3 min.)
Yeast: Wyeast Scottish Ale Yeast
Carbonation: Primed with 3/4 c. Orange Blossom Honey
Tasting: The Honey/Alcohol combination needs a while to mellow out. Could
probably use a somewhat higher hopping rate too.
