Beer: Old Pecker Style: English Old/Strong Ale
Type: All grain Size: 5.50 gallons
Color:
37 HCU (~18 SRM)
Bitterness: 29 IBU
OG: 1.058 FG: 1.008
Alcohol: 6.4% v/v (5.0% w/w)
Water: 1 tsp. of gypsum added to boil water
Grain: 7 lb. 12 oz. American 2-row
1 lb. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
4 oz. American black patent
8 oz. Torrified wheat
Mash: 75% efficiency
Mash at 152ºF for 75 minutes and sparge until runoff SG is
1.000-not temperature compensated.
Boil: 60 minutes SG 1.047 6.75 gallons
1 lb. Cane sugar
Irish moss last 15 minutes of boil.
Hops: .70 oz. Challenger (7.00% AA, 60 min.)
1.1 oz. Fuggles (4.75% AA, 60 min.)
Yeast: Any Britsh ale yeast will do.
Log: Ferment at 70ºF. Rack to secondary after 5 days in the primary.
Carbonation: 2.2 volumes Corn Sugar: 3.85 oz. for 5.25 gallons @ 70°F
Tasting: I haven't tried this recipe yet, but since it's from
Wheeler & Protz I expect it to be wonderful.
