Alcohol: 7.2% v/v (5.6% w/w)
Water: 2 tsp gypsum added to mash water
Grain: 4 lb. British pale
.5 oz. Roasted barley
.5 oz. Peat Smoked
Mash: 70% efficiency
Boil: 75 minutes SG 1.114 4 gallons
5. lb. Light dry malt extract
3.3 lb. Light malt extract
1 tsp Irish Moss last 5 minutes of boil
Hops: 4 oz. Northern Brewer (8.5% AA, 60 min.)
4 oz. Kent Goldings (aroma)
Yeast: 1 vial Edinburgh Ale Yeast White Labs #WLP028
Log: 01/28/01 1.073 OG temp 76 used pint of starter to kick it off
01/29/01 Temp 70 Good,active fermentation; high krausen
01/30/01 Fermentation slowed but still going well; solids piling up at bottom temp 68
02/01/01 Fermentation almost stopped; temp 64; racked into new carboy; gravity 1.017; tastes fine, malt background - hoppy nose
